Hard boiled or soft?
We’ve been eating like kings here in Iceland. Beautiful lamb, salmon, trout, all readily available at remote petrol stations, and then barbecued to perfection by Serena. Yummy. But breakfast has been another matter – usually consisting of a couple of biscuits and a strong coffee before we pack up Lottie and drive on.
Except for today. We stumbled across a small farm where we could buy eggs laid by hens in the garden, and then cook them in a nearby hot spring. Yet another example of creative harnessing of geo-thermal energy.
So we bought a few eggs, and were given a small net. This enables you to gently lower the eggs into the simmering hot spring to cook. Evidently the spring reliably takes 10 minutes for hard boiled or 6 for soft.
Delicious. The best breakfast we’ve had or will have for a while.
